Easy One-Pot Chicken Biryani
Making a delicious, restaurant-quality Biryani at home doesn't have to be complicated. This Easy One-Pot Chicken Biryani cuts out the complex layering and long preparation times while still giving you perfectly spiced chicken and fluffy, flavorful rice.
Ingredients
- For the Chicken Marinade:
- 500g chicken
- 1 cup plain yogurt
- 1 tablespoon ginger-garlic paste
- 1 teaspoon turmeric powder
- 1 tablespoon red chili powder
- 1 tablespoon biryani masala
- 1 teaspoon salt
- Juice of 1 lime or lemon

For the Rice & Whole Spices:
- 2 cups Basmati rice
- 3 tablespoons oil or ghee
- 2 medium onions
- 1 bay leaf
- 4 green cardamom pods
- 4 cloves, and
- 1 small cinnamon stick
- 1 teaspoon cumin seeds
- A handful of fresh mint and coriander leaves
- 3 cups water
Instructions
- In a mixing bowl, combine the chicken, yogurt, ginger-garlic paste, turmeric, chili powder, biryani masala, salt, and lemon juice. Mix well and let it sit for at least 15-20 minutes while you prep the other ingredients.
- Heat the oil or ghee in a large, heavy-bottomed pot or a pressure cooker over medium heat. Add the whole spices (bay leaf, cardamom, cloves, cinnamon, and cumin) and let them sizzle for 30 seconds to release their aroma. Add the sliced onions and fry them until they turn golden brown.
- Add the marinated chicken to the pot. Sauté on medium heat for 5-7 minutes until the chicken changes color. Cover the pot, lower the heat, and let it cook for about 10-15 minutes until the chicken is tender and the oil separates from the masala
- Stir in the chopped mint and coriander leaves. Add the drained, soaked basmati rice and gently mix it with the chicken masala for 1-2 minutes. Pour in the 3 cups of water and add a little more salt to taste (the water should taste slightly salty).
- Bring the water to a rolling boil. Once it boils, cover the pot with a tight-fitting lid, turn the heat down to the absolute lowest setting, and cook for 15-20 minutes until the rice is fully cooked and the water has been absorbed.
- Turn off the heat and let the biryani rest, covered, for 10 minutes before opening the lid. Fluff the rice gently with a fork and serve hot with raita (yogurt dip) or a fresh salad.
